Penedès
Penedès lies south-west of Barcelona in Catalonia between the coastal mountains and is the most important wine region in Catalonia and the historic home of Cava, Spain's traditional-method sparkling wine. The area gained DO status and contains around 18,000 hectares spread across three altitude regions: Bajo Penedès (coastal), Medio Penedès (the largest, home to major Cava producers such as Freixenet and Codorníu) and Alto/Superior Penedès, which lies 600-800 metres high and favours aromatic white wines.
The climate is Mediterranean with warm summers and mild winters, and the soils consist mainly of limestone, sand and clay. About 90 percent of the plantings are white grapes, primarily the three classic Cava grapes Macabeo, Xarel·lo and Parellada, complemented by Chardonnay and Pinot Noir as well as international red varieties such as Cabernet Sauvignon and Merlot. The style ranges from fresh, sparkling Cavas with citrus, apple, bread and almond, through aromatic dry whites, to structured reds with ripe dark berries, spices and soft tannins. The area is known as the birthplace of Cava and a pioneer of modern Spanish wine culture, often with a commitment to organic and biodynamic viticulture.

Storage
Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.
Enjoyment
Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
