Cahors is situated in the Lot valley south of Périgord and was granted AOC status in 1971. The broader Sud-Ouest region, nestled between Bordeaux, Dordogne, Toulouse, and the Pyrenees, is characterized by a wide variety of climates and soils, ranging from cool mountainous vineyards to warm river valleys. In Cahors, the climate is shaped by a mix of Atlantic and continental influences, resulting in sunny summers and significant diurnal temperature variations. The vineyards are primarily spread across two main terroirs: the alluvial terraces along the Lot valley and the elevated limestone plateaus known as Les Causses, which sit at altitudes above 250 meters.
This wine is produced from a blend of Malbec and Merlot. Cahors is widely recognized as the historical cradle of Malbec, where the grape is locally referred to as Côt or Auxerrois. By appellation rules, Malbec must constitute at least 70 percent of the blend in Cahors, providing a stricter and rockier expression compared to the Argentine style. The addition of Merlot, a classic grape frequently cultivated in regions like Bordeaux, California, Washington, and Northern Italy, complements the local Malbec in the final composition.

Zuid-Oost
Sud-Ouest lies in south-western France between Bordeaux, the Dordogne, Toulouse and the Pyrenees. The area comprises many smaller wine zones with great variation in climate, soil and grape varieties, from cool mountain-edge vineyards to warm valleys along the Garonne, Lot, Tarn and Dordogne rivers. Malbec, Tannat, Cabernet Franc, Cabernet Sauvignon, Merlot and Fer Servadou are important black grapes, while Colombard, Gros Manseng, Petit Manseng, Mauzac and Len de l'El are used for white wine. The red wines range from fruity and spicy to dark, firm and tannic with notes of blackberry, blackcurrant, plum, pepper, herbs, liquorice and leather. The white wines can be fresh, aromatic or sweet with citrus, exotic fruit, honey and flowers. The area is known for local grapes, rustic reds, characterful whites and appellations such as Cahors, Madiran, Gaillac, Jurançon, Bergerac, Fronton and Irouléguy.
